This is a delicious guilt-free flavouring for your classic bodybuilding/fitness diet. This seasoning instantly transforms the flavour of chicken, fish, and salads, and you can even sprinkle it over your carbs too (it works amazingly well as a seasoning for our homemade healthy oven chips).

Lemon pepper is great for anyone on a weight loss or muscle-building diet as it has zero fat and zero calories, unlike traditional flavourings and sauces. We recommend making it yourself so that you know it contains no harmful preservatives.

Ingredients

  • 5-8 Unwaxed Lemons
  • A Handful of Black Peppercorns
  • A Large Pinch of Sea Salt

Method

  1. Using the fine side of a grater, grate the zest of 5-8 unwaxed lemons. In a pestle and mortar, mix the lemon zest with a handful of black peppercorns and sea salt and smash it all up into a fine paste.
  2. Grab a large oven tray and cover with baking parchment. Scatter the lemon pepper mixture evenly over the baking paper. Place the tray in the oven on its lowest heat setting and leave until it is completely dried out. This should take about 45 mins to an hour.
  3. Optional: once dried, you can use a spice grinder to grind it into a smooth paste. Personally I preferred the crunchy organic texture so left it as it came out of the over.
  4. Pour the dried lemon pepper into a container (an old glass spice container is usually best) and store in the cupboard for up to 6 months.
  5. Rub your lemon pepper season-all into meat or chicken prior to cooking to infuse it with a delicious light lemon pepper taste.
