These deliciously rich and chocolately protein cookies, jewelled with crunchy green pistachio nuts, are the perfect way to satisfy a craving. They’re crunchy on the outside with a soft, chewy centre – just the way a cookie should be!
However, unlike your regular cookies, these are low in fat, low in carbs and high in protein. Each cookie is under 80 calories each, yet still packing 8.6g of protein! These flourless cookies are also completely gluten-free and sugar-free. What’s more, they’re super easy to make, requiring just 6 ingredients and only 10 minutes in the oven.

Ingredients
Servings: 12 protein cookies
Macros (per cookie): Calories 79 kcal, Protein 8.6g, Carbs 2.2g, Fat 3.8g, Fibre 1.1g
- 4 Tbsps Peanut Butter
- 4 scoops Chocolate flavour Casein Protein powder
- 4 Tbsps unsweetened Cocoa Powder
- 140ml Almond Milk
- 1 tsp Coconut Oil (5ml)
- Pistachio nuts, shelled and roughly chopped

Method
1. Preheat your oven to 170°C (325F or Gas Mark 3).
2. Whilst it’s heating up, add all the ingredients (except for the pistachios) into a mixing bowl. Mix them all together thoroughly – you should end up with a thick gooey dough.
3. Line a large flat baking tray with baking parchment.
4. Roll handfuls of the dough into small balls and press down into small flat round cookie shapes.
5. Place your cookies on your lined baking tray and sprinkle pistachio pieces over each. Press the pistachios down into the cookies slightly.
6. Transfer to the oven and bake for 10 minutes.
7. Leave to cool, then enjoy!
